Happy New Year!

Tis' the season for sniffles and sneezes. There is nothing better than a warm bowl of soup on a cold winter day. This soup is designed to boost your immune system, detox all the overindulgence during the holidays and help you feel better if you are sick.

Everything in this soup has been chosen based on the healing properties, vitamins and trace minerals in the vegetables and rhizomes. I use my homemade vegetable broth as the foundation for this soup. The flavor of the soup is mild and easy to sip but it is stocked with garlic, onion, leeks, rainbow chard, turmeric, ginger, mushrooms, carrots. celery, cilantro, parsley, yams, sweet potatoes, parsnips, and lemon juice.

Here are a few highlighted health benefits of the rhizomes and vegetables in this nutritious soup. Turmeric is an anti-inflammatory, antibacterial and antiseptic. It also is a natural detox for your liver. Carrots are rich in beta carotene which the liver converts into Vitamin A. Vitamin A is great for the skin and eyes as well as providing immune support.

Onions and leeks have anti-inflammatory properties as well as chromium. Chromium helps regulate the blood sugar. Sweet Potatoes and Yams are one of my favorites because they are full of vitamins, minerals and fiber such as vitamin D, B6, magnesium, iron and vitamin C just to name a few important ones.

Mushrooms are also a good source of fiber as well as great source of antioxidants. Garlic is another favorite of mine because can help reduce blood cholesterol, regulate blood sugar levels and is a great source of antioxidants. Lemons are high in vitamin C and have both antiviral and antibacterial properties. They can help with digestion and balance the pH in the body. Finally, Ginger is an anti-inflammatory, antiviral and antibacterial.

This soup vegetarian, gluten free and New Years’ resolution friendly. Enjoy the soup fresh or stock your freezer for a rainy day.
