Provençal Chicken with Red Onions, Olives & Coconut Milk
Dinner consist of roasted Provençal chicken with red onions, olives, coconut milk, lemons and a side of rice.
Originally, I was skeptical about putting Herbs de Provençal and coconut milk together but it is absolutely delicious. The two marry to create a creamy and savory dish. The lemon adds a hint of acidity while the olives adds a element of tanginess. This meal is light, fresh and full of flavor.
